Ingredients
- 100 grams prawns
- 1 cup coconut milk
- 1 tsp chopped garlic
- Salt to taste
- 1/2 tsp black pepper
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 tomato, chopped
- 1 cup coriander leaves or parsley
- 1 tsp chopped ginger
- 1 tsp turmeric powder (haldi)
- 1 tsp lemon juice
Instructions
- In a bowl, combine peeled prawns with 1 tablespoon of oil, minced garlic, ½ teaspoon salt, and ½ teaspoon black pepper. Toss to coat and let marinate while preparing the vegetables.
- Heat a large skillet over medium heat and add 2 tablespoons of vegetable oil. Add the chopped onion and bell pepper; cook for about 3 minutes.
- Add 2 coarsely chopped garlic cloves and cook for an additional minute. Then, stir in the canned diced tomatoes and chopped herbs (basil and cilantro/parsley), cooking for about 2 minutes. Transfer this mixture to a blender and set aside.
- In the same skillet, add the remaining 2 tablespoons of oil and cook the marinated prawns for 2 minutes. Flip them and cook for another 1-2 minutes until they turn pink. Transfer the shrimp to a plate.
- In the skillet, add coconut milk, broth, lime juice, and ground ginger. Blend the cooked vegetable mixture and return it to the skillet; bring everything to a boil.
- Add the cooked shrimp back into the skillet and toss to coat. Garnish with fresh basil leaves and chopped cilantro/parsley before serving.
