Ingredients:
- 1.5 lbs (680g) medium shrimp, peeled and deveined (fresh or frozen, thawed)
- 2 limes, juiced (approximately 1/4 cup / 60ml)
- 1 small red chili pepper, finely minced, seeds and veins removed (adjust to taste)
- 1 dash salt
- 1 dash black pepper
- 1/2 red onion, very thinly sliced
- 3 large ripe avocados, pitted and cubed
- 1 cup fresh pineapple, chopped into bite-sized pieces
- 1/2 cup fresh cilantro leaves, roughly chopped
- 1 cup cold water
- 1 teaspoon salt
Instructions:
- Thinly slice red onion and submerge it in a bowl of cold, salted water. Let sit for 10 minutes to mellow the flavor.
- Bring a pot of water to a boil. Add shrimp and cook for 1-2 minutes, or until pink and opaque. Immediately drain and rinse with cold water to stop the cooking process.
- In a large bowl, combine cooked shrimp, minced chili pepper, lime juice, salt, and pepper. Toss to coat and let marinate for 5 minutes.
- While the shrimp is marinating, chop the avocado and pineapple into bite-sized pieces. Roughly chop the cilantro.
- Drain the red onion and add to the bowl with the marinated shrimp, avocado, pineapple, and cilantro. Gently toss everything together.
- Cover the bowl and chill in the refrigerator for at least 15 minutes to allow the flavors to meld. Serve cold.
