Ingredients:

  • 1.5 lbs (680g) medium shrimp, peeled and deveined (fresh or frozen, thawed)
  • 2 limes, juiced (approximately 1/4 cup / 60ml)
  • 1 small red chili pepper, finely minced, seeds and veins removed (adjust to taste)
  • 1 dash salt
  • 1 dash black pepper
  • 1/2 red onion, very thinly sliced
  • 3 large ripe avocados, pitted and cubed
  • 1 cup fresh pineapple, chopped into bite-sized pieces
  • 1/2 cup fresh cilantro leaves, roughly chopped
  • 1 cup cold water
  • 1 teaspoon salt

Instructions:

  1. Thinly slice red onion and submerge it in a bowl of cold, salted water. Let sit for 10 minutes to mellow the flavor.
  2. Bring a pot of water to a boil. Add shrimp and cook for 1-2 minutes, or until pink and opaque. Immediately drain and rinse with cold water to stop the cooking process.
  3. In a large bowl, combine cooked shrimp, minced chili pepper, lime juice, salt, and pepper. Toss to coat and let marinate for 5 minutes.
  4. While the shrimp is marinating, chop the avocado and pineapple into bite-sized pieces. Roughly chop the cilantro.
  5. Drain the red onion and add to the bowl with the marinated shrimp, avocado, pineapple, and cilantro. Gently toss everything together.
  6. Cover the bowl and chill in the refrigerator for at least 15 minutes to allow the flavors to meld. Serve cold.
