Ingredients:

  • 4 Salmon Fillets (about 6 oz / 170g each), center-cut preferred
  • 1 Tbsp Olive Oil (Extra virgin)
  • Salt & Black Pepper (To taste, coarse sea salt preferred)
  • 3 Tbsp Dijon Mustard (Good quality, smooth)
  • 2 Tbsp Fresh Lemon Juice (About 1 medium lemon)
  • 1 Tbsp Honey or Maple Syrup
  • 2 cloves Garlic (Minced very finely)
  • 1 Tbsp Fresh Parsley (Chopped, for garnish)

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Pat the salmon fillets very dry using paper towels. Place fillets on the prepared baking sheet. Drizzle lightly with olive oil and season generously with salt and pepper.
  3. In a small bowl, whisk together the Dijon mustard, fresh lemon juice, honey (or maple syrup), and minced garlic until fully combined and smooth to create the Lemon Dijon Glaze.
  4. Spoon or brush the Lemon Dijon mixture evenly over the top surface of each salmon fillet, ensuring good coverage.
  5. Bake for 12–15 minutes. The salmon is done when it flakes easily with a fork (aim for an internal temperature of 145°F / 63°C).
  6. Remove from the oven. Let rest for 2 minutes. Garnish with fresh chopped parsley before serving immediately.
