Ingredients:
- 4 Salmon Fillets (about 6 oz / 170g each), center-cut preferred
- 1 Tbsp Olive Oil (Extra virgin)
- Salt & Black Pepper (To taste, coarse sea salt preferred)
- 3 Tbsp Dijon Mustard (Good quality, smooth)
- 2 Tbsp Fresh Lemon Juice (About 1 medium lemon)
- 1 Tbsp Honey or Maple Syrup
- 2 cloves Garlic (Minced very finely)
- 1 Tbsp Fresh Parsley (Chopped, for garnish)
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- Pat the salmon fillets very dry using paper towels. Place fillets on the prepared baking sheet. Drizzle lightly with olive oil and season generously with salt and pepper.
- In a small bowl, whisk together the Dijon mustard, fresh lemon juice, honey (or maple syrup), and minced garlic until fully combined and smooth to create the Lemon Dijon Glaze.
- Spoon or brush the Lemon Dijon mixture evenly over the top surface of each salmon fillet, ensuring good coverage.
- Bake for 12–15 minutes. The salmon is done when it flakes easily with a fork (aim for an internal temperature of 145°F / 63°C).
- Remove from the oven. Let rest for 2 minutes. Garnish with fresh chopped parsley before serving immediately.
