Ingredients:
- 2 tbsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp brown sugar
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp cayenne pepper
- 1/4 tsp dried thyme
- 1/4 tsp dried oregano
- 4 tilapia fillets (6 oz each)
- 2 tbsp avocado oil
- 1 tbsp unsalted butter
- 4 lemon wedges
Instructions:
- Pat each tilapia fillet completely dry with paper towels to remove surface moisture.
- In a small bowl, whisk together smoked paprika, garlic powder, onion powder, brown sugar, salt, pepper, cayenne, thyme, and oregano.
- Press the seasoning firmly into both sides of the fish until heavily coated.
- Heat avocado oil in a cast iron skillet over medium-high heat until it shimmers and begins to smoke.
- Place fillets in the pan and sear undisturbed for 3 minutes to establish the crust.
- Flip the fillets and add the unsalted butter to the pan, basting the fish for another 2-3 minutes until opaque and flaky.
- Remove fillets from the pan and let them rest on a plate for 2 minutes.
- Squeeze fresh lemon juice over the top before serving.
