Ingredients:

  • 2 tbsp smoked paprika
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp brown sugar
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp cayenne pepper
  • 1/4 tsp dried thyme
  • 1/4 tsp dried oregano
  • 4 tilapia fillets (6 oz each)
  • 2 tbsp avocado oil
  • 1 tbsp unsalted butter
  • 4 lemon wedges

Instructions:

  1. Pat each tilapia fillet completely dry with paper towels to remove surface moisture.
  2. In a small bowl, whisk together smoked paprika, garlic powder, onion powder, brown sugar, salt, pepper, cayenne, thyme, and oregano.
  3. Press the seasoning firmly into both sides of the fish until heavily coated.
  4. Heat avocado oil in a cast iron skillet over medium-high heat until it shimmers and begins to smoke.
  5. Place fillets in the pan and sear undisturbed for 3 minutes to establish the crust.
  6. Flip the fillets and add the unsalted butter to the pan, basting the fish for another 2-3 minutes until opaque and flaky.
  7. Remove fillets from the pan and let them rest on a plate for 2 minutes.
  8. Squeeze fresh lemon juice over the top before serving.
