Ingredients:
- 1 cup (225g) sweet potato
- 1/2 tsp (3g) garlic powder
- 1/4 tsp (1g) smoked paprika
- 1/4 tsp (1.5g) salt
- 1/8 tsp (0.5g) black pepper
- 1 lb (450g) white fish fillets (Tilapia, Cod, or Grouper)
- 1 tbsp (15ml) olive oil
- 1/2 tsp (3g) paprika
- 1/4 tsp (1.5g) salt
Instructions:
- Mash the sweet potato until velvety smooth. Stir in the garlic powder, smoked paprika, salt, and pepper until the color is uniform.
- Pat the fish fillets bone-dry with paper towels to ensure the crust adheres.
- Rub the olive oil, paprika, and salt over the tops of the fillets.
- Using a spoon, spread a generous layer of the sweet potato mixture over the top of each fillet and press down gently.
- Place the fillets on a parchment-lined baking sheet and bake at 400°F (200°C) for 12–15 minutes.
- Optional: Turn on the broiler for the final 2 minutes until the edges are bubbling and the crust is slightly charred.
