Ingredients:
- 2-3 lbs (900g-1.3kg) bone-in, skin-on chicken pieces (thighs, drumsticks, breasts - your choice!)
- 2 tablespoons (30ml) olive oil
- 1 medium lemon, cut into wedges
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 1/2 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/4 teaspoon paprika (smoked paprika is a plus!)
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C / Gas Mark 6).
- Pat chicken pieces dry with paper towels. This is crucial for crispy skin!
- In a bowl, toss chicken pieces with olive oil, thyme, rosemary, garlic powder, onion powder, paprika, salt, and pepper. Ensure chicken is evenly coated.
- Place chicken pieces in a single layer in the baking dish, ensuring they are not overcrowded. Arrange lemon wedges around the chicken.
- Bake for 45-60 minutes, or until the internal temperature of the chicken reaches 165°F (74°C) in the thickest part. If the skin starts to brown too quickly, loosely tent with foil.
- Remove from oven and let rest for 5-10 minutes before serving. This allows the juices to redistribute, resulting in a more tender and flavorful chicken.
