Ingredients:
- 2 ripe avocados, sliced (approximately 300g)
- 1 cup ketchup (240 ml)
- 5 3/4 dozen medium-sized cooked shrimp, peeled and deveined (approximately 700g or 1.5 lbs)
- 8 sticks green onions, thinly sliced (approximately 40g)
- 1 ½ tablespoons shallots, finely minced (approximately 25ml)
- 1 ½ tablespoons olive oil (approximately 22ml)
- ½ slice cucumber, diced small (approximately 30g)
- ⅔ cup fresh parsley, chopped (approximately 20g or 160 ml)
- ¾ cup fresh lime juice (approximately 180 ml)
- 1 ⅔ tablespoons Tabasco sauce (approximately 30ml)
- Salt and freshly ground black pepper, to taste
Instructions:
- Gently mash the sliced avocado in the mixing bowl, leaving some chunks for texture.
- Add the ketchup, lime juice, olive oil, and Tabasco sauce to the mashed avocado. Stir well to combine.
- Add the cooked shrimp, green onions, shallots, cucumber, and parsley to the mixture.
- Season with salt and pepper to taste. Gently fold all ingredients together, being careful not to overmix. Taste and adjust seasoning as needed.
- Divide the cocktail evenly among serving glasses or bowls. Garnish with extra parsley or a lime wedge, if desired. Serve immediately.
