Ingredients:
- 4 (6 oz) tilapia fillets
- 1 tsp smoked paprika
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/4 tsp cayenne pepper
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp olive oil
- 2 tbsp unsalted butter
- 1 small lemon, cut into wedges
Instructions:
- Pat tilapia fillets completely dry on both sides using paper towels to ensure a proper sear.
- In a small bowl, combine smoked paprika, garlic powder, onion powder, cayenne, salt, and black pepper. Press the seasoning evenly into both sides of the fillets.
- Heat olive oil in a large non-stick or cast iron skillet over medium-high heat until the oil is shimmering and just beginning to smoke.
- Place fillets in the pan and sear undisturbed for 3 minutes to develop a golden-brown crust.
- Carefully flip the fillets using a fish spatula.
- Add unsalted butter to the pan. As it foams, tilt the pan and spoon the melted butter over the fish for the final 2 minutes of cooking.
- Remove from heat and serve immediately with lemon wedges.
