Ingredients:

  • 4 (6 oz) tilapia fillets
  • 1 tsp smoked paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 small lemon, cut into wedges

Instructions:

  1. Pat tilapia fillets completely dry on both sides using paper towels to ensure a proper sear.
  2. In a small bowl, combine smoked paprika, garlic powder, onion powder, cayenne, salt, and black pepper. Press the seasoning evenly into both sides of the fillets.
  3. Heat olive oil in a large non-stick or cast iron skillet over medium-high heat until the oil is shimmering and just beginning to smoke.
  4. Place fillets in the pan and sear undisturbed for 3 minutes to develop a golden-brown crust.
  5. Carefully flip the fillets using a fish spatula.
  6. Add unsalted butter to the pan. As it foams, tilt the pan and spoon the melted butter over the fish for the final 2 minutes of cooking.
  7. Remove from heat and serve immediately with lemon wedges.
