Instructions:
- Heat the lard or fat in a medium heavy-bottomed saucepan or skillet over medium heat until shimmering.
- Add the diced onion. Sauté gently until soft and translucent, about 4–5 minutes. Do not allow the onions to brown.
- Add the minced garlic, cumin, and smoked paprika. Stir constantly for 30–60 seconds until fragrant. Be careful not to burn the garlic.
- Scoop the contents of the canned refried beans into the pan. Stir well to combine thoroughly with the aromatic fat base.
- Add the warmed broth. Bring the mixture to a gentle simmer, stirring frequently to prevent sticking to the bottom. Cook for 5 minutes.
- Reduce heat to low. Using the back of your spoon or a potato masher, mash the beans directly in the pan until a smooth, creamy consistency is achieved. If it seems too thick, add a tablespoon of water or broth at a time.
- If using, stir in the shredded cheese until melted and fully incorporated for extra richness and body.
