Ingredients:

  • 1 lb Salmon fillets
  • 2 cups Broccoli florets
  • 1 cup Sliced carrots
  • 2 tbsp Olive oil
  • 1/2 tsp Salt
  • 1/4 tsp Black pepper
  • 3 tbsp Honey
  • 2 tbsp Soy sauce
  • 1 tbsp Lemon juice
  • 3 cloves Minced garlic

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a large rimmed sheet pan with parchment paper. Note: A hot oven is crucial for that initial sizzle.
  2. Toss the broccoli florets and sliced carrots in olive oil, salt, and black pepper directly on the pan. Listen for the rustle of the oil coating the veg.
  3. Push the vegetables to the edges of the pan to create a center landing zone. Note: This prevents the fish from steaming the veggies.
  4. Whisk together the honey, soy sauce, lemon juice, and minced garlic in a small bowl. The aroma should be sweet and pungent.
  5. Place the salmon fillets in the center of the pan.
  6. Spoon the glaze generously over the fish. Note: Make sure every inch of the top is covered.
  7. Pour any remaining glaze over the surrounding vegetables.
  8. Roast in the oven for 12–15 minutes until the glaze is a deep mahogany color, broccoli tips are charred, and the salmon flakes easily.
