Ingredients:

  • 1 cup extra virgin olive oil
  • 4 cloves garlic, thinly sliced
  • 1 tsp red pepper flakes
  • 1 tsp kosher salt
  • 1 lb large shrimp, peeled and deveined (tail-on)
  • 1 tbsp fresh lemon juice
  • 2 tbsp fresh parsley, chopped
  • 1/4 tsp black pepper

Instructions:

  1. Warm the olive oil, sliced garlic, red pepper flakes, and salt in a skillet over medium-low heat. Stir occasionally for 3–5 minutes until the garlic is fragrant and translucent, but not browned.
  2. Carefully slide the shrimp into the warm oil. Lower the heat to a simmer so the oil barely bubbles. Poach for 2–4 minutes, turning occasionally, until the shrimp are opaque and form a 'C' shape.
  3. Use a slotted spoon to transfer the shrimp to a serving platter. Immediately drizzle with fresh lemon juice and sprinkle with chopped parsley and black pepper.
