Ingredients:

  • 1.4kg (3 pounds) Russet potatoes, peeled and cut into ½-inch cubes
  • 60ml (¼ cup) Vegetable oil
  • 1 Large yellow onion, thinly sliced
  • 2 cloves garlic, minced
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • Optional: 1 teaspoon paprika
  • Optional: Fresh parsley, chopped

Instructions:

  1. Peel and cube the potatoes into roughly ½-inch pieces for even cooking.
  2. Heat the oil in a large skillet over medium-high heat until shimmering.
  3. Add the potatoes to the skillet in a single layer. Cook, stirring occasionally, until golden brown in spots.
  4. Add the sliced onion and minced garlic to the skillet. Continue to cook, stirring frequently, until onions are softened and potatoes are crispy.
  5. Season with salt, pepper, and paprika (if using). Toss to combine and taste for seasoning. Serve immediately, garnished with fresh parsley (if using).
