Ingredients:
- 1.4kg (3 pounds) Russet potatoes, peeled and cut into ½-inch cubes
- 60ml (¼ cup) Vegetable oil
- 1 Large yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
- Optional: 1 teaspoon paprika
- Optional: Fresh parsley, chopped
Instructions:
- Peel and cube the potatoes into roughly ½-inch pieces for even cooking.
- Heat the oil in a large skillet over medium-high heat until shimmering.
- Add the potatoes to the skillet in a single layer. Cook, stirring occasionally, until golden brown in spots.
- Add the sliced onion and minced garlic to the skillet. Continue to cook, stirring frequently, until onions are softened and potatoes are crispy.
- Season with salt, pepper, and paprika (if using). Toss to combine and taste for seasoning. Serve immediately, garnished with fresh parsley (if using).
