Ingredients:

  • 1/4 cup (60 ml) olive oil, extra virgin
  • 1/4 cup (60 ml) fresh lemon juice
  • 2 cloves garlic, minced
  • 2 tablespoons fresh parsley, chopped
  • 1 tablespoon fresh oregano, chopped
  • 1 teaspoon dried red pepper flakes (optional)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1.5 pounds (680g) large shrimp, peeled and deveined
  • Wooden or metal skewers

Instructions:

  1. In a bowl, whisk together olive oil, lemon juice, garlic, parsley, oregano, red pepper flakes (if using), salt, and pepper.
  2. Add shrimp to the marinade, toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
  3. Preheat grill to medium-high heat (about 375-450°F or 190-230°C). Clean the grill grates thoroughly.
  4. Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer.
  5. Place skewers on the hot grill. Cook for 3-4 minutes per side, or until shrimp are pink and opaque.
  6. Remove shrimp from grill and serve immediately. These grilled shrimp skewers are best served hot.
