Ingredients:
- 1/4 cup (60 ml) olive oil, extra virgin
- 1/4 cup (60 ml) fresh lemon juice
- 2 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1 tablespoon fresh oregano, chopped
- 1 teaspoon dried red pepper flakes (optional)
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1.5 pounds (680g) large shrimp, peeled and deveined
- Wooden or metal skewers
Instructions:
- In a bowl, whisk together olive oil, lemon juice, garlic, parsley, oregano, red pepper flakes (if using), salt, and pepper.
- Add shrimp to the marinade, toss to coat evenly. Cover and refrigerate for at least 30 minutes, or up to 2 hours.
- Preheat grill to medium-high heat (about 375-450°F or 190-230°C). Clean the grill grates thoroughly.
- Thread the marinated shrimp onto skewers, about 4-5 shrimp per skewer.
- Place skewers on the hot grill. Cook for 3-4 minutes per side, or until shrimp are pink and opaque.
- Remove shrimp from grill and serve immediately. These grilled shrimp skewers are best served hot.
