Ingredients:
- 4 Salmon Fillets (approx. 6 oz/170g each)
- 1/4 cup Fresh Parsley, chopped
- 2 tablespoons Fresh Dill, chopped
- Zest of 1 large lemon
- 2 tablespoons Fresh Lemon Juice
- 3 tablespoons Extra Virgin Olive Oil
- 2 cloves Garlic, minced
- 1 teaspoon Dijon Mustard
- 1 teaspoon Sea Salt (or Kosher Salt)
- 1/2 teaspoon Black Pepper, freshly ground
Instructions:
- Preheat oven to 400°F (200°C). Line a large rimmed baking sheet with parchment paper or foil.
- Prepare the Herb Paste: In a small mixing bowl, whisk together the olive oil, lemon zest, lemon juice, minced garlic, Dijon mustard, parsley, dill, salt, and pepper until well combined into a cohesive paste.
- Coat the Salmon: Place the salmon fillets skin-side down on the lined baking sheet, ensuring adequate space between them. Generously spoon or brush the herb mixture evenly over the top surface of each fillet.
- Bake: Place the tray into the preheated oven and bake for 12 to 18 minutes, depending on the thickness of your fillets.
- Monitor Doneness: Fish is done when it easily flakes with a fork, or when an instant-read thermometer inserted into the thickest part registers 145°F (63°C).
- Rest & Serve: Carefully remove the salmon from the oven. Let it rest for 2 minutes before gently lifting onto serving plates.
