Ingredients:

  • 1 tbsp extra virgin olive oil
  • 1 tsp freshly cracked black pepper
  • 1 tsp coarse sea salt
  • 1 tbsp fresh lemon zest
  • 1/2 tsp garlic powder
  • 2 (6 oz) yellowfin tuna steaks
  • 1 tbsp avocado oil
  • 1 tbsp fresh lemon juice
  • fresh parsley for garnish

Instructions:

  1. Pat the tuna steaks completely dry with paper towels to ensure a proper sear.
  2. In a small bowl, mix olive oil, lemon zest, black pepper, salt, and garlic powder. Rub the paste evenly over all sides of the tuna steaks.
  3. Let the steaks sit at room temperature for 10–15 minutes to temper for even cooking.
  4. Heat avocado oil in a cast iron skillet over medium-high heat until the oil is shimmering and just beginning to smoke.
  5. Place tuna in the pan and press down lightly. Sear for 60–90 seconds per side for rare, or 2 minutes per side for medium-rare.
  6. Just before removing the tuna from the pan, drizzle in the fresh lemon juice to create a bright pan-sauce.
  7. Transfer steaks to a plate and let them rest for 5 minutes.
  8. Slice the tuna into 1/2-inch thick pieces across the grain and garnish with fresh parsley.
