Ingredients:
- 1 tbsp extra virgin olive oil
- 1 tsp freshly cracked black pepper
- 1 tsp coarse sea salt
- 1 tbsp fresh lemon zest
- 1/2 tsp garlic powder
- 2 (6 oz) yellowfin tuna steaks
- 1 tbsp avocado oil
- 1 tbsp fresh lemon juice
- fresh parsley for garnish
Instructions:
- Pat the tuna steaks completely dry with paper towels to ensure a proper sear.
- In a small bowl, mix olive oil, lemon zest, black pepper, salt, and garlic powder. Rub the paste evenly over all sides of the tuna steaks.
- Let the steaks sit at room temperature for 10–15 minutes to temper for even cooking.
- Heat avocado oil in a cast iron skillet over medium-high heat until the oil is shimmering and just beginning to smoke.
- Place tuna in the pan and press down lightly. Sear for 60–90 seconds per side for rare, or 2 minutes per side for medium-rare.
- Just before removing the tuna from the pan, drizzle in the fresh lemon juice to create a bright pan-sauce.
- Transfer steaks to a plate and let them rest for 5 minutes.
- Slice the tuna into 1/2-inch thick pieces across the grain and garnish with fresh parsley.
