Ingredients:
- 4 pieces of cod fillets (about 6 oz each)
- 1 tablespoon olive oil
- Salt to taste
- Black pepper to taste
- ½ cup unsalted butter, softened
- 2 tablespoons fresh parsley, finely chopped
- 1 tablespoon fresh dill, finely chopped
- 1 tablespoon fresh chives, finely chopped
- Zest of 1 lemon
- 1 tablespoon lemon juice
- 2 cloves garlic, minced
Instructions:
- Preheat the oven to 400°F (200°C).
- In a mixing bowl, combine softened butter, parsley, dill, chives, lemon zest, lemon juice, and minced garlic. Mix until well blended.
- Prepare a baking dish by drizzling olive oil and seasoning the cod fillets with salt and pepper.
- Arrange the cod fillets in the baking dish, skin-side down.
- Use a brush or spatula to generously spread the herb butter mixture over each fillet.
- Bake in the preheated oven for 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
- Serve immediately, garnished with additional herbs and lemon slices if desired.
