Ingredients:

  • 4 pieces of cod fillets (about 6 oz each)
  • 1 tablespoon olive oil
  • Salt to taste
  • Black pepper to taste
  • ½ cup unsalted butter, softened
  • 2 tablespoons fresh parsley, finely chopped
  • 1 tablespoon fresh dill, finely chopped
  • 1 tablespoon fresh chives, finely chopped
  • Zest of 1 lemon
  • 1 tablespoon lemon juice
  • 2 cloves garlic, minced

Instructions:

  1. Preheat the oven to 400°F (200°C).
  2. In a mixing bowl, combine softened butter, parsley, dill, chives, lemon zest, lemon juice, and minced garlic. Mix until well blended.
  3. Prepare a baking dish by drizzling olive oil and seasoning the cod fillets with salt and pepper.
  4. Arrange the cod fillets in the baking dish, skin-side down.
  5. Use a brush or spatula to generously spread the herb butter mixture over each fillet.
  6. Bake in the preheated oven for 15-20 minutes, or until the cod is opaque and flakes easily with a fork.
  7. Serve immediately, garnished with additional herbs and lemon slices if desired.
