Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
- In a small mixing bowl, whisk together the olive oil, lemon juice, lemon zest, parsley, dill, garlic powder, salt, and pepper to create the herb mixture.
- Pat the salmon fillets very dry with paper towels. Place fillets on the prepared baking sheet.
- Brush the herb mixture evenly over the top (flesh side) of each salmon fillet.
- Sprinkle the Panko breadcrumbs lightly and evenly over the herbed surface of the salmon.
- Place the sheet pan into the preheated oven and bake for 12 to 15 minutes, depending on thickness.
- Check for doneness: The salmon is ready when it flakes easily with a fork or reaches an internal temperature of 145°F (63°C).
- Remove from the oven. Let rest for 2 minutes before serving, optionally with an extra squeeze of fresh lemon.
