  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil.
  2. In a small mixing bowl, whisk together the olive oil, lemon juice, lemon zest, parsley, dill, garlic powder, salt, and pepper to create the herb mixture.
  3. Pat the salmon fillets very dry with paper towels. Place fillets on the prepared baking sheet.
  4. Brush the herb mixture evenly over the top (flesh side) of each salmon fillet.
  5. Sprinkle the Panko breadcrumbs lightly and evenly over the herbed surface of the salmon.
  6. Place the sheet pan into the preheated oven and bake for 12 to 15 minutes, depending on thickness.
  7. Check for doneness: The salmon is ready when it flakes easily with a fork or reaches an internal temperature of 145°F (63°C).
  8. Remove from the oven. Let rest for 2 minutes before serving, optionally with an extra squeeze of fresh lemon.
