Ingredients:
- 1.5 lbs cod fillets, cut into 4 equal portions
- 1/2 tsp kosher salt
- 1/4 tsp cracked black pepper
- 1 tbsp olive oil
- 4 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 2 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, finely chopped
- 1/2 tsp paprika
Instructions:
- Preheat your oven to 400°F (200°C). Line a 9x13 inch baking dish with parchment paper or lightly grease it.
- Use paper towels to firmly pat the cod fillets dry on all sides, then season both sides lightly with salt and pepper.
- In a small bowl, whisk together the melted butter, minced garlic, lemon juice, lemon zest, paprika, and parsley to create a compound emulsion.
- Place the fillets in the prepared baking dish and drizzle the lemon garlic butter evenly over each fillet using a spoon.
- Bake for 10–12 minutes until the edges are opaque and the center flakes easily with a fork, or the internal temperature reaches 145°F (63°C).
