Ingredients:

  • 1.5 lbs cod fillets, cut into 4 equal portions
  • 1/2 tsp kosher salt
  • 1/4 tsp cracked black pepper
  • 1 tbsp olive oil
  • 4 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 2 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, finely chopped
  • 1/2 tsp paprika

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a 9x13 inch baking dish with parchment paper or lightly grease it.
  2. Use paper towels to firmly pat the cod fillets dry on all sides, then season both sides lightly with salt and pepper.
  3. In a small bowl, whisk together the melted butter, minced garlic, lemon juice, lemon zest, paprika, and parsley to create a compound emulsion.
  4. Place the fillets in the prepared baking dish and drizzle the lemon garlic butter evenly over each fillet using a spoon.
  5. Bake for 10–12 minutes until the edges are opaque and the center flakes easily with a fork, or the internal temperature reaches 145°F (63°C).
