Ingredients:

  • Salmon Fillets (about 6 oz / 170g each)
  • Tbsp Extra Virgin Olive Oil
  • cloves Fresh Garlic, minced
  • Tbsp Fresh Dill, chopped
  • tsp Lemon Zest
  • Tbsp Fresh Lemon Juice
  • tsp Coarse Sea Salt
  • ½ tsp Freshly Ground Black Pepper
  • Extra thin lemon slices for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C). Line a rimmed baking sheet with parchment paper or foil.
  2. In a small bowl, whisk together the olive oil, minced garlic, dill, lemon zest, lemon juice, salt, and pepper until well combined.
  3. Pat the salmon fillets thoroughly dry using paper towels. Place the fillets skin-side down on the prepared baking sheet.
  4. Spoon the aromatic mixture evenly over the top (flesh side) of each salmon fillet, ensuring they are well coated.
  5. Place 1-2 thin slices of fresh lemon directly on top of each fillet as garnish.
  6. Transfer the baking sheet to the preheated oven. Bake for 12 to 15 minutes.
  7. The salmon is done when it flakes easily with a fork. The internal temperature, checked at the thickest part, should read 145°F (63°C).
  8. Remove from the oven and let rest on the pan for 2 minutes before plating immediately.
