Ingredients:
- 2 (6-ounce/170g) salmon fillets, skin on or off
- 2 tablespoons/30ml honey
- 2 tablespoons/30ml soy sauce (low sodium recommended)
- 2 cloves garlic, minced
- 1 tablespoon/15ml olive oil
- 1/2 teaspoon/2.5ml ground ginger
- 1/4 teaspoon/1.25ml red pepper flakes (optional)
- Salt and freshly ground black pepper, to taste
- 1 pound/450g asparagus, trimmed
- 1 tablespoon/15ml olive oil
- Salt and freshly ground black pepper, to taste
- Lemon wedges, for serving (optional)
Instructions:
- Preheat oven to 400°F (200°C/Gas Mark 6). Line a baking sheet with parchment paper (optional). Place salmon fillets on the baking sheet.
- In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, ground ginger, and red pepper flakes (if using).
- Brush the honey-garlic glaze evenly over the salmon fillets.
- Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. (Internal temperature should reach 145°F/63°C).
- While the salmon is baking, toss the trimmed asparagus with olive oil, salt, and pepper on a separate section of the baking sheet.
- Roast the asparagus alongside the salmon for the last 8-10 minutes of the salmon's cooking time, or until tender-crisp.
- Remove from the oven and serve the honey-garlic glazed salmon immediately with the roasted asparagus. Garnish with lemon wedges, if desired.
