Ingredients:

  • 2 (6-ounce/170g) salmon fillets, skin on or off
  • 2 tablespoons/30ml honey
  • 2 tablespoons/30ml soy sauce (low sodium recommended)
  • 2 cloves garlic, minced
  • 1 tablespoon/15ml olive oil
  • 1/2 teaspoon/2.5ml ground ginger
  • 1/4 teaspoon/1.25ml red pepper flakes (optional)
  • Salt and freshly ground black pepper, to taste
  • 1 pound/450g asparagus, trimmed
  • 1 tablespoon/15ml olive oil
  • Salt and freshly ground black pepper, to taste
  • Lemon wedges, for serving (optional)

Instructions:

  1. Preheat oven to 400°F (200°C/Gas Mark 6). Line a baking sheet with parchment paper (optional). Place salmon fillets on the baking sheet.
  2. In a small bowl, whisk together honey, soy sauce, minced garlic, olive oil, ground ginger, and red pepper flakes (if using).
  3. Brush the honey-garlic glaze evenly over the salmon fillets.
  4. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork. (Internal temperature should reach 145°F/63°C).
  5. While the salmon is baking, toss the trimmed asparagus with olive oil, salt, and pepper on a separate section of the baking sheet.
  6. Roast the asparagus alongside the salmon for the last 8-10 minutes of the salmon's cooking time, or until tender-crisp.
  7. Remove from the oven and serve the honey-garlic glazed salmon immediately with the roasted asparagus. Garnish with lemon wedges, if desired.
