Ingredients:

  • 4 large ripe tomatoes (about 1 pound / 450g)
  • 2 tablespoons olive oil (30ml)
  • Salt and pepper, to taste
  • ¼ cup fresh basil leaves, chopped (15g)
  • ¼ cup fresh parsley leaves, chopped (15g)
  • 2 tablespoons red wine vinegar (30ml)
  • 3 tablespoons olive oil (45ml)
  • 1 small clove garlic, minced

Instructions:

  1. Preheat the grill or grill pan over medium-high heat.
  2. Slice the tomatoes in half horizontally. Drizzle them with olive oil and season with salt and pepper.
  3. In a mixing bowl, combine chopped basil, parsley, red wine vinegar, minced garlic, olive oil, salt, and pepper. Whisk together until well blended.
  4. Place the tomatoes cut-side down on the grill. Cook for about 4-5 minutes until grill marks appear and they soften. Flip them over and grill for another 3-4 minutes until tender.
  5. Remove from the grill, arrange on a serving plate, and drizzle with herb vinaigrette. Serve warm.
