Ingredients:

  • 2 (6-8 oz) lobster tails
  • 1 tablespoon olive oil
  • Salt and freshly ground black pepper to taste
  • 1/4 cup unsalted butter, softened
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon lemon zest
  • 1 tablespoon chopped fresh parsley (optional)
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Pat lobster tails dry with paper towels. If desired, use kitchen shears to butterfly the tails: cut down the centre of the top shell, almost to the tail fan, and gently pull the meat up and out of the shell. Brush with olive oil and season with salt and pepper.
  2. In a small saucepan or microwave-safe bowl, combine softened butter, minced garlic, lemon juice, lemon zest, parsley (if using), and red pepper flakes (if using). Melt gently (either on the stovetop over low heat or in the microwave in short bursts). Stir to combine.
  3. Preheat grill to medium heat (about 350-400°F/175-200°C). Clean and lightly oil the grill grates.
  4. Place lobster tails, meat-side down, on the preheated grill. Grill for 4-6 minutes. Flip lobster tails over and baste generously with lemon-garlic butter. Grill for another 4-6 minutes, basting occasionally, until the lobster meat is opaque and firm to the touch and the internal temperature reaches 135-140°F (57-60°C).
  5. Remove lobster tails from the grill and serve immediately with remaining lemon-garlic butter for dipping.
