Ingredients:

  • 1/4 cup soy sauce
  • 1 tbsp toasted sesame oil
  • 1 tbsp rice vinegar
  • 1 tbsp honey
  • 1 tbsp fresh ginger, finely grated
  • 2 cloves garlic, minced
  • 1/2 tsp red pepper flakes
  • 2 (6 oz) Ahi tuna steaks
  • 1 tbsp avocado oil

Instructions:

  1. In a glass bowl, combine the soy sauce, sesame oil, rice vinegar, honey, grated ginger, minced garlic, and red pepper flakes. Whisk vigorously until the honey is fully dissolved and the mixture is emulsified.
  2. Place the tuna steaks in the marinade, ensuring they are fully submerged. Cover and refrigerate for 30 minutes.
  3. Remove tuna from the marinade and pat the surfaces lightly with paper towels to ensure a proper sear.
  4. Heat avocado oil in a cast iron skillet over high heat until it just begins to smoke.
  5. Carefully place tuna in the pan. Sear for exactly 60–90 seconds per side for a rare center.
  6. Transfer the steaks to a warm plate and let them rest for 3–5 minutes to allow the heat to migrate inward.
