Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
- In a small bowl, combine the melted butter, minced garlic, lemon zest, lemon juice, half of the chopped parsley, salt, pepper, and red pepper flakes (if using). Whisk briefly to combine.
- Pat the shrimp very dry with paper towels. Transfer the dry shrimp to the large bowl.
- Pour the garlic butter mixture over the shrimp. Toss gently until every piece is evenly coated.
- Sprinkle the grated Parmesan cheese over the shrimp and toss one final time to coat.
- Spread the coated shrimp out on the prepared baking sheet in a single layer, ensuring there is space between each shrimp.
- Bake for 10 to 12 minutes. Shrimp are done when pink and opaque, curled into a loose 'C' shape. Watch closely if using the broiler for browning.
- Remove from the oven. Immediately sprinkle with the remaining fresh parsley and serve straight away.
