Ingredients:

  • 1 lb (450g) large shrimp, peeled and deveined
  • 4 tbsp (57g) unsalted butter, divided
  • 4 cloves (12g) garlic, minced
  • 1 tbsp (15ml) olive oil
  • 1 tbsp (15ml) fresh lemon juice
  • 2 tbsp (8g) fresh parsley, chopped
  • 1/2 tsp (3g) salt
  • 1/4 tsp (1g) black pepper
  • 1/4 tsp (1g) red pepper flakes

Instructions:

  1. Pat the shrimp completely dry with paper towels to ensure a proper sear.
  2. Heat olive oil and 1 tbsp (14g) of butter in a large stainless steel or cast-iron skillet over medium-high heat until the butter foams.
  3. Add shrimp in a single layer; sear for 2 minutes without moving them until the bottoms are golden.
  4. Flip the shrimp and sear for 1 minute more.
  5. Reduce heat to medium. Push the shrimp to the sides of the pan and add the remaining 3 tbsp (43g) of butter to the center.
  6. Once the butter is melted, stir in the minced garlic and red pepper flakes. Sauté for 1 minute until fragrant but not browned.
  7. Toss the shrimp back into the garlic butter and stir in the lemon juice, salt, and pepper.
  8. Remove from heat immediately once the sauce is glossy and the shrimp are opaque.
  9. Fold in the fresh parsley just before serving to maintain its color.
