Ingredients:
- 1 lb medium shrimp, peeled and deveined
- 1/2 tsp salt
- 1/4 tsp ground black pepper
- 1 tbsp lemon juice
- 2 tbsp vegetable oil
- 1 medium yellow onion, finely diced
- 4 cloves garlic, minced
- 1 small tomato, diced
- 1 cup tomato sauce
- 2 tbsp tomato paste
- 1 tbsp fish sauce
- 1 tsp granulated sugar
- 1/4 cup water
- 1 tbsp fresh parsley, chopped
Instructions:
- Toss the peeled shrimp in a small bowl with salt, pepper, and lemon juice. Let them sit for 5 minutes to season and tenderize.
- Heat oil in a skillet over medium heat. Sauté diced onion until translucent, then stir in minced garlic and cook for 60 seconds until fragrant.
- Stir in tomato paste and diced tomato, cooking for 2 minutes. Pour in tomato sauce, fish sauce, sugar, and water. Simmer on medium-low for 5 minutes until thickened.
- Increase heat to medium-high and add shrimp in a single layer. Cook for 2–3 minutes per side until bright pink and opaque.
- Remove from heat immediately and stir in fresh parsley before serving.
