Ingredients:
- Four 6 oz (170g) salmon fillets (skin on or off)
- 2 Tablespoons Extra Virgin Olive Oil
- 1 medium Fresh Lemon (half for juice, half for slicing)
- 2 Tablespoons Fresh Dill, chopped
- 1 teaspoon Garlic Powder
- 1 teaspoon Kosher Salt (or Sea Salt)
- ½ teaspoon Freshly Ground Black Pepper
- ¼ teaspoon Paprika (Optional)
Instructions:
- Preheat oven to 400°F (200°C / Gas Mark 6). Line a baking sheet with parchment paper.
- Pat the salmon fillets very dry using paper towels. Place them on the lined baking sheet.
- In a small bowl, whisk together olive oil, lemon juice (from half the lemon), chopped dill, garlic powder, salt, pepper, and paprika (if using).
- Spoon the mixture evenly over the top and sides of the salmon fillets.
- Thinly slice the remaining half of the lemon and arrange the slices on top of or alongside the fillets.
- Place the sheet in the preheated oven. Bake for 12–18 minutes, depending on fillet thickness.
- Test for doneness by gently inserting a fork into the thickest part; the fish should flake easily. Target internal temperature is 145°F (63°C).
- Remove from the oven and let rest for 2 minutes before serving immediately.
