Ingredients:

  • Four 6 oz (170g) salmon fillets (skin on or off)
  • 2 Tablespoons Extra Virgin Olive Oil
  • 1 medium Fresh Lemon (half for juice, half for slicing)
  • 2 Tablespoons Fresh Dill, chopped
  • 1 teaspoon Garlic Powder
  • 1 teaspoon Kosher Salt (or Sea Salt)
  • ½ teaspoon Freshly Ground Black Pepper
  • ¼ teaspoon Paprika (Optional)

Instructions:

  1. Preheat oven to 400°F (200°C / Gas Mark 6). Line a baking sheet with parchment paper.
  2. Pat the salmon fillets very dry using paper towels. Place them on the lined baking sheet.
  3. In a small bowl, whisk together olive oil, lemon juice (from half the lemon), chopped dill, garlic powder, salt, pepper, and paprika (if using).
  4. Spoon the mixture evenly over the top and sides of the salmon fillets.
  5. Thinly slice the remaining half of the lemon and arrange the slices on top of or alongside the fillets.
  6. Place the sheet in the preheated oven. Bake for 12–18 minutes, depending on fillet thickness.
  7. Test for doneness by gently inserting a fork into the thickest part; the fish should flake easily. Target internal temperature is 145°F (63°C).
  8. Remove from the oven and let rest for 2 minutes before serving immediately.
