Ingredients:
- 4 (6 oz / 170g) cold-water lobster tails, thawed if frozen
- 2 tbsp (28g) unsalted butter, melted
- 1/4 cup (60g) mayonnaise
- 2 tbsp (28g) melted unsalted butter
- 1 tsp (5g) sriracha
- 1 tbsp (15ml) fresh lemon juice
- 1/2 tsp (2g) garlic powder
- 1/4 tsp (1g) smoked paprika
- 1 tbsp (4g) fresh parsley, finely chopped
Instructions:
- Place the lobster tails on a cutting board, belly side up. Using kitchen shears, cut straight down the center of the top shell, stopping just before the eye socket.
- Gently pry the shell open and lift the lobster meat upward, resting it on top of the shell to create a butterfly effect.
- Brush the exposed lobster meat lightly with 2 tablespoons of melted butter.
- In a small bowl, whisk together the mayonnaise, 2 tablespoons of melted butter, sriracha, lemon juice, garlic powder, and smoked paprika.
- Stir in the finely chopped parsley until evenly distributed.
- Preheat the broiler to high and position the oven rack approximately 6 inches from the heat source.
- Spoon a generous dollop of the deviled mixture onto the center of each lobster tail, spreading it to the edges of the meat.
- Broil for 8–12 minutes until the meat is opaque and the topping is mahogany-colored gold and bubbling.
