Ingredients:
- 2 (6-ounce/170g) cod fillets, skinless, about 1 inch thick
- 1 tablespoon (15ml) olive oil
- 1/2 teaspoon (2.5ml) salt
- 1/4 teaspoon (1.25ml) black pepper
- 1/2 cup (50g) panko breadcrumbs
- 2 tablespoons (30ml) grated Parmesan cheese
- 2 tablespoons (30ml) finely chopped fresh parsley
- 1 tablespoon (15ml) finely chopped fresh chives
- 1 tablespoon (15ml) lemon zest (from about 1/2 lemon)
- 1 tablespoon (15ml) melted unsalted butter
- 1/4 teaspoon (1.25ml) garlic powder
- Pinch of red pepper flakes (optional)
Instructions:
- Pat the cod fillets dry with kitchen paper. Drizzle with olive oil, then season with salt and pepper.
- In a small bowl, combine panko breadcrumbs, Parmesan cheese, parsley, chives, lemon zest, melted butter, garlic powder, and red pepper flakes (if using). Mix well.
- Evenly coat the top of each cod fillet with the lemon-herb crumb mixture, pressing gently to adhere.
- Preheat the air fryer to 400°F (200°C) for 3 minutes. Place the cod fillets in the air fryer basket (you may want to line it with baking paper for easy clean up).
- Air fry for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork, and the crumb topping is golden brown.
- Remove the air fryer cod from the air fryer and serve immediately.
