Ingredients:

  • 2 (6-ounce/170g) cod fillets, skinless, about 1 inch thick
  • 1 tablespoon (15ml) olive oil
  • 1/2 teaspoon (2.5ml) salt
  • 1/4 teaspoon (1.25ml) black pepper
  • 1/2 cup (50g) panko breadcrumbs
  • 2 tablespoons (30ml) grated Parmesan cheese
  • 2 tablespoons (30ml) finely chopped fresh parsley
  • 1 tablespoon (15ml) finely chopped fresh chives
  • 1 tablespoon (15ml) lemon zest (from about 1/2 lemon)
  • 1 tablespoon (15ml) melted unsalted butter
  • 1/4 teaspoon (1.25ml) garlic powder
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Pat the cod fillets dry with kitchen paper. Drizzle with olive oil, then season with salt and pepper.
  2. In a small bowl, combine panko breadcrumbs, Parmesan cheese, parsley, chives, lemon zest, melted butter, garlic powder, and red pepper flakes (if using). Mix well.
  3. Evenly coat the top of each cod fillet with the lemon-herb crumb mixture, pressing gently to adhere.
  4. Preheat the air fryer to 400°F (200°C) for 3 minutes. Place the cod fillets in the air fryer basket (you may want to line it with baking paper for easy clean up).
  5. Air fry for 12-15 minutes, or until the cod is cooked through and flakes easily with a fork, and the crumb topping is golden brown.
  6. Remove the air fryer cod from the air fryer and serve immediately.
