Ingredients:

  • 2 cups (160g) rolled oats (not instant)
  • ½ cup (100g) packed brown sugar
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • 1 teaspoon baking powder
  • ¼ teaspoon salt
  • 2 cups (480ml) milk (dairy or non-dairy)
  • 2 large eggs, lightly beaten
  • ¼ cup (60ml) melted unsalted butter
  • 1 teaspoon vanilla extract
  • 2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
  2. In a large mixing bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, baking powder, and salt. Whisk to ensure even distribution.
  3. In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Gently fold in the diced apples into the oat mixture.
  6. Pour the mixture into the prepared baking dish.
  7. Bake for 40-45 minutes, or until golden brown and set. A knife inserted into the center should come out clean (or with slightly moist crumbs).
  8. Let cool for a few minutes before serving.
