Ingredients:
- 2 cups (160g) rolled oats (not instant)
- ½ cup (100g) packed brown sugar
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 1 teaspoon baking powder
- ¼ teaspoon salt
- 2 cups (480ml) milk (dairy or non-dairy)
- 2 large eggs, lightly beaten
- ¼ cup (60ml) melted unsalted butter
- 1 teaspoon vanilla extract
- 2 medium apples (Granny Smith or Honeycrisp), peeled, cored, and diced
Instructions:
- Preheat oven to 375°F (190°C). Grease a 9x13 inch baking dish.
- In a large mixing bowl, combine the rolled oats, brown sugar, cinnamon, nutmeg, baking powder, and salt. Whisk to ensure even distribution.
- In a separate bowl, whisk together the milk, eggs, melted butter, and vanilla extract.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Gently fold in the diced apples into the oat mixture.
- Pour the mixture into the prepared baking dish.
- Bake for 40-45 minutes, or until golden brown and set. A knife inserted into the center should come out clean (or with slightly moist crumbs).
- Let cool for a few minutes before serving.
