Ingredients:
- 1.5 lb salmon fillets, center-cut, skin-on
- 2 tbsp extra virgin olive oil
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1/2 tsp sea salt
- 1/4 tsp cracked black pepper
- 1 lemon, half sliced into rounds, half juiced
Instructions:
- Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Pat the salmon fillets completely dry with paper towels to ensure a caramelized exterior.
- In a small mixing bowl, whisk together olive oil, minced garlic, dried oregano, sea salt, black pepper, and lemon juice.
- Brush the herb mixture generously over the top and sides of the fillets, then place lemon rounds on top of each piece.
- Roast on the center rack for 12-15 minutes, or until the internal temperature reaches 135°F (57°C).
- Remove from oven and let rest; carry-over cooking will bring the internal temperature to 145°F (63°C).
