Ingredients:

  • 1.5 lb salmon fillets, center-cut, skin-on
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 1 lemon, half sliced into rounds, half juiced

Instructions:

  1. Preheat oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Pat the salmon fillets completely dry with paper towels to ensure a caramelized exterior.
  3. In a small mixing bowl, whisk together olive oil, minced garlic, dried oregano, sea salt, black pepper, and lemon juice.
  4. Brush the herb mixture generously over the top and sides of the fillets, then place lemon rounds on top of each piece.
  5. Roast on the center rack for 12-15 minutes, or until the internal temperature reaches 135°F (57°C).
  6. Remove from oven and let rest; carry-over cooking will bring the internal temperature to 145°F (63°C).
