Ingredients:

  • 1 medium head green cabbage (about 2 lbs / 900g), cored and shredded
  • 4 tablespoons (57g) unsalted butter
  • 2 cloves garlic, minced
  • 1/4 cup (15g) fresh parsley, chopped
  • 1/4 cup (15g) fresh chives, chopped
  • 1 tablespoon fresh lemon juice
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Core and shred the cabbage.
  2. Add about 1 inch of water to a pot and bring to a boil. Place a steamer basket inside, ensuring the water doesn't touch it. Add the shredded cabbage, cover tightly, and steam until tender-crisp (about 8-10 minutes).
  3. While the cabbage is steaming, melt the butter in a small saucepan over medium heat. Continue cooking until the butter turns golden brown and has a nutty aroma (about 3-5 minutes). Be careful not to burn it!
  4. Stir in the minced garlic and cook for about 30 seconds, until fragrant.
  5. Drain the steamed cabbage well and transfer it to a large mixing bowl. Pour the browned butter and garlic mixture over the cabbage. Add the chopped parsley, chives, and lemon juice.
  6. Toss gently to combine. Season with salt and pepper to taste.
  7. Serve immediately.
