Ingredients:
- 1 pound jumbo shrimp (16-20 count), peeled and deveined
- 1/2 cup plain breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 2 cloves garlic, minced
- 1/4 teaspoon dried oregano
- 1/4 teaspoon dried basil
- 1/4 teaspoon red pepper flakes (optional)
- 1/4 cup unsalted butter, melted
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- Salt and freshly ground black pepper to taste
Instructions:
- Butterfly each shrimp by slicing along the back almost all the way through, leaving the tail intact. Gently flatten the shrimp.
- In a small bowl, combine breadcrumbs, Parmesan cheese, parsley, garlic, oregano, basil, red pepper flakes (if using), salt, and pepper.
- Arrange the butterflied shrimp in the baking dish. Spoon a generous amount of the stuffing mixture into the opening of each shrimp.
- Drizzle the melted butter and olive oil evenly over the stuffed shrimp.
- Bake in a preheated oven at 375°F (190°C) for 12-15 minutes, or until the shrimp is pink and opaque and the stuffing is golden brown.
