Ingredients:

  • 1.5 lbs fresh Whiting fillets (skinless)
  • 3 tbsp Unsalted butter, melted
  • 1 tbsp Extra virgin olive oil
  • 3 cloves Garlic, minced into a paste
  • 1 large Lemon, half sliced into rounds and half juiced
  • 1 tsp Smoked paprika
  • 1/2 tsp Onion powder
  • 1/2 tsp Sea salt
  • 1/4 tsp Cracked black pepper
  • 2 tbsp Fresh parsley or dill, finely chopped

Instructions:

  1. Preheat your oven to 400°F (200°C). Line your baking sheet with parchment paper. Use a paper towel to pat each whiting fillet until it is completely dry on both sides to ensure the seasoning adheres correctly.
  2. In a small mixing bowl, whisk together the melted butter, olive oil, minced garlic, lemon juice, smoked paprika, and onion powder.
  3. Arrange the fillets in a single layer in a 9x13 inch baking dish. Coat the fillets generously with the butter mixture using a brush or spoon.
  4. Sprinkle the fish evenly with sea salt and cracked black pepper. Tuck the lemon slices between the fish pieces for extra aroma.
  5. Bake in the center rack for 10–12 minutes until the flesh is opaque and flakes easily. Optional: Broil for the final 60 seconds for a slightly crisp edge.
