Ingredients:

  • 4 salmon fillets (approx 1.5 lbs / 680g)
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • 3 tbsp unsalted butter, melted
  • 3 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
  2. Pat the salmon fillets completely dry with paper towels and place them skin-side down on the prepared baking sheet.
  3. In a small mixing bowl, whisk together the melted butter, minced garlic, lemon juice, and lemon zest.
  4. Brush the olive oil over the fillets first, then spoon the lemon garlic butter mixture generously over the top and sides.
  5. Season the fillets with salt and black pepper.
  6. Bake in the center rack of the oven for 12–15 minutes until the salmon is opaque pink and the butter is bubbling.
  7. Remove from oven, immediately sprinkle with fresh chopped parsley, and let the fish rest on the pan for 5 minutes before serving.
