Ingredients:
- 4 salmon fillets (approx 1.5 lbs / 680g)
- 1 tbsp olive oil
- ½ tsp salt
- ¼ tsp black pepper
- 3 tbsp unsalted butter, melted
- 3 cloves garlic, minced
- 1 tbsp fresh lemon juice
- 1 tsp lemon zest
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C) and line a large rimmed baking sheet with parchment paper.
- Pat the salmon fillets completely dry with paper towels and place them skin-side down on the prepared baking sheet.
- In a small mixing bowl, whisk together the melted butter, minced garlic, lemon juice, and lemon zest.
- Brush the olive oil over the fillets first, then spoon the lemon garlic butter mixture generously over the top and sides.
- Season the fillets with salt and black pepper.
- Bake in the center rack of the oven for 12–15 minutes until the salmon is opaque pink and the butter is bubbling.
- Remove from oven, immediately sprinkle with fresh chopped parsley, and let the fish rest on the pan for 5 minutes before serving.
