Ingredients:

  • 1 lb pollock fish fillets
  • 1/2 tsp sea salt
  • 1/4 tsp cracked black pepper
  • 3 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp fresh lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp dried parsley

Instructions:

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the pollock fillets completely dry using paper towels to ensure proper searing.
  3. Place the fillets on the prepared baking sheet and season evenly with salt and pepper.
  4. In a small bowl, whisk together the melted butter, minced garlic, lemon juice, lemon zest, and dried parsley.
  5. Brush the lemon garlic butter mixture generously over the top and edges of each fillet.
  6. Bake on the center rack for 10–12 minutes until the fish is opaque and flakes easily with a fork.
  7. Optional: Turn on the broiler for the final 60 seconds until the butter is bubbling and golden brown.
