Ingredients:

  • 4 mahi mahi fillets (approx. 6 oz / 170g each)
  • ½ tsp salt
  • ¼ tsp black pepper
  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, melted
  • 1 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried dill
  • ¼ tsp paprika
  • ¼ cup Panko breadcrumbs
  • 2 tbsp grated Parmesan cheese
  • 1 tbsp fresh parsley, chopped

Instructions:

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Pat the mahi mahi fillets completely dry with a paper towel, then rub each fillet with olive oil and season with salt and pepper.
  3. In a small bowl, stir together the melted butter, lemon juice, minced garlic, dill, and paprika.
  4. In a separate small bowl, toss the Panko breadcrumbs, grated Parmesan cheese, and chopped parsley together.
  5. Spoon the herb butter evenly over each fillet, coating the top and sides.
  6. Press the Panko mixture firmly onto the top of each fillet.
  7. Bake for 12–15 minutes until the crust is golden brown and the fish is opaque and flakes easily with a fork (internal temperature of 140°F).
