Ingredients:
- 4 mahi mahi fillets (approx. 6 oz / 170g each)
- ½ tsp salt
- ¼ tsp black pepper
- 1 tbsp olive oil
- 3 tbsp unsalted butter, melted
- 1 tbsp fresh lemon juice
- 2 cloves garlic, minced
- 1 tsp dried dill
- ¼ tsp paprika
- ¼ cup Panko breadcrumbs
- 2 tbsp grated Parmesan cheese
- 1 tbsp fresh parsley, chopped
Instructions:
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Pat the mahi mahi fillets completely dry with a paper towel, then rub each fillet with olive oil and season with salt and pepper.
- In a small bowl, stir together the melted butter, lemon juice, minced garlic, dill, and paprika.
- In a separate small bowl, toss the Panko breadcrumbs, grated Parmesan cheese, and chopped parsley together.
- Spoon the herb butter evenly over each fillet, coating the top and sides.
- Press the Panko mixture firmly onto the top of each fillet.
- Bake for 12–15 minutes until the crust is golden brown and the fish is opaque and flakes easily with a fork (internal temperature of 140°F).
