Ingredients:
- 1 pound (450g) fresh asparagus, trimmed
- 2 tablespoons (30ml) olive oil
- 1 lemon, zested and juiced (about 1 tablespoon juice)
- 1/4 cup (25g) grated Parmesan cheese
- 1/4 teaspoon (1.25ml) garlic powder
- Salt and freshly ground black pepper to taste
Instructions:
- Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easier cleanup.
- In a small bowl, whisk together olive oil, lemon zest, lemon juice, garlic powder, salt, and pepper.
- Place the asparagus on the baking sheet and drizzle with the olive oil mixture. Use tongs to toss and ensure the asparagus is evenly coated.
- Sprinkle Parmesan cheese evenly over the asparagus.
- Bake for 10-15 minutes, or until the asparagus is tender-crisp and the Parmesan is golden brown and slightly melted. Watch carefully to prevent burning.
- Serve hot as a side dish or snack.
