  • 1 pound (450g) fresh asparagus, trimmed
  • 2 tablespoons (30ml) olive oil
  • 1 lemon, zested and juiced (about 1 tablespoon juice)
  • 1/4 cup (25g) grated Parmesan cheese
  • 1/4 teaspoon (1.25ml) garlic powder
  • Salt and freshly ground black pepper to taste

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper or foil for easier cleanup.
  2. In a small bowl, whisk together olive oil, lemon zest, lemon juice, garlic powder, salt, and pepper.
  3. Place the asparagus on the baking sheet and drizzle with the olive oil mixture. Use tongs to toss and ensure the asparagus is evenly coated.
  4. Sprinkle Parmesan cheese evenly over the asparagus.
  5. Bake for 10-15 minutes, or until the asparagus is tender-crisp and the Parmesan is golden brown and slightly melted. Watch carefully to prevent burning.
  6. Serve hot as a side dish or snack.
