Ingredients:
- 1 cup (185g) white quinoa, rinsed
- 2 cups (480ml) distilled or spring water
- 1/4 tsp (1.5g) sea salt
- 1/2 lb (225g) large shrimp, peeled and deveined
- 1/2 lb (225g) sea scallops, patted dry
- 2 tbsp (30ml) avocado oil
- 1 medium (150g) ripe avocado, sliced
- 2 cups (60g) baby kale or spinach, chopped
- 3 tbsp (45ml) extra virgin olive oil
- 2 tbsp (30ml) fresh lime juice
- 1 tbsp (15ml) fresh cilantro, minced
Instructions:
- Combine rinsed quinoa, water, and salt in a medium pot. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes.
- Remove quinoa from heat and let sit, covered, for 5 minutes before fluffing with a fork.
- Pat the shrimp and scallops completely dry with paper towels to ensure a proper sear.
- Heat avocado oil in a skillet over medium-high heat until it shimmers.
- Add seafood in a single layer. Sear scallops for 2 minutes per side until a mahogany-colored crust forms.
- Sear shrimp for 2 minutes per side until they turn opaque and curl into a 'C' shape.
- In a small bowl, whisk together olive oil, lime juice, and minced cilantro.
- Toss the chopped kale in the lime dressing until the leaves are velvety and coated.
- Divide the fluffy quinoa between two bowls.
- Layer the dressed kale, seared seafood, and sliced avocado on top of the quinoa.
