Instructions:
- Wash and thoroughly dry the lettuce leaves. Prepare the vegetable garnishes by julienning the cucumber and shredding the carrot if using.
- Gently toast the sesame seeds in a dry skillet over medium-low heat for 2-3 minutes until fragrant. Set aside to cool completely.
- In a medium mixing bowl, add the well-drained tuna and use a fork to flake it until mostly broken down, retaining some texture.
- Add the mayonnaise, Sriracha, sesame oil, soy sauce, rice vinegar, and lime juice to the tuna.
- Gently fold all ingredients together until just combined. Do not over-mix.
- Stir in the sliced scallions and the cooled toasted sesame seeds. Taste and adjust Sriracha or seasoning as needed.
- Lay out the dried lettuce cups. Spoon a generous portion of the spicy tuna filling into the centre of each leaf.
- Top the tuna mixture with the cucumber matchsticks, shredded carrot, and a few cilantro leaves. Serve the Spicy Tuna Wraps immediately.
