  1. Wash and thoroughly dry the lettuce leaves. Prepare the vegetable garnishes by julienning the cucumber and shredding the carrot if using.
  2. Gently toast the sesame seeds in a dry skillet over medium-low heat for 2-3 minutes until fragrant. Set aside to cool completely.
  3. In a medium mixing bowl, add the well-drained tuna and use a fork to flake it until mostly broken down, retaining some texture.
  4. Add the mayonnaise, Sriracha, sesame oil, soy sauce, rice vinegar, and lime juice to the tuna.
  5. Gently fold all ingredients together until just combined. Do not over-mix.
  6. Stir in the sliced scallions and the cooled toasted sesame seeds. Taste and adjust Sriracha or seasoning as needed.
  7. Lay out the dried lettuce cups. Spoon a generous portion of the spicy tuna filling into the centre of each leaf.
  8. Top the tuna mixture with the cucumber matchsticks, shredded carrot, and a few cilantro leaves. Serve the Spicy Tuna Wraps immediately.
