Ingredients:

  • 1 pound (450g) raw shrimp, peeled, deveined, and tails removed (preferably wild-caught, 31-40 size)
  • 1 cup (240ml) fresh lime juice (about 6-8 limes, plus extra wedges for serving)
  • 1/2 cup (120ml) fresh lemon juice (about 3-4 lemons)
  • 1/2 medium red onion, finely diced (about 1/2 cup or 75g)
  • 1 jalapeño pepper, seeded and finely minced (or more, to taste)
  • 1 large tomato, seeded and diced (about 1 cup or 150g)
  • 1/2 cup (50g) fresh cilantro, chopped
  • 1 avocado, diced (for serving, optional)
  • Salt and freshly ground black pepper to taste
  • Optional: Hot sauce, such as Tabasco, for serving

Instructions:

  1. Chop the shrimp into bite-sized pieces (about 1/2-inch).
  2. Combine shrimp, lime juice, and lemon juice in the bowl. Ensure shrimp are fully submerged. Cover and refrigerate for at least 30 minutes, or until shrimp are opaque and firm.
  3. Drain the shrimp, discarding most of the marinade (leave a little bit for flavor). Add the diced red onion, jalapeño, and tomato to the bowl.
  4. Stir in the cilantro, salt, and pepper. Taste and adjust seasonings as needed.
  5. Cover and refrigerate for another 15 minutes to allow the flavors to meld. Serve immediately, garnished with diced avocado and lime wedges, if desired.
