Ingredients:
- 1 lb cooked, peeled shrimp (large or extra-large)
- 1 lime, juiced (about 3 tablespoons or 45ml)
- 2 tablespoons olive oil
- 1 teaspoon taco seasoning
- 1 small jalapeño, finely diced (optional)
- 1 cup cherry tomatoes, quartered
- ½ cup cucumber, peeled and diced
- ½ medium red onion, finely diced
- ¼ cup fresh cilantro, chopped
- 1 ripe avocado, diced
- Tortilla chips or crispy tostadas
- Lime wedges
- Hot sauce (optional)
Instructions:
- In a mixing bowl, combine lime juice, olive oil, taco seasoning, and jalapeño.
- Add shrimp and toss to coat well.
- Cover and refrigerate for at least 30 minutes to marinate.
- While shrimp marinates, chop the vegetables (cherry tomatoes, cucumber, red onion, cilantro).
- After marinating, mix in the chopped veggies and diced avocado with the shrimp.
- Transfer to a serving dish, garnish with lime wedges, and serve with tortilla chips or tostadas.
