Ingredients:

  • 1 lb cooked, peeled shrimp (large or extra-large)
  • 1 lime, juiced (about 3 tablespoons or 45ml)
  • 2 tablespoons olive oil
  • 1 teaspoon taco seasoning
  • 1 small jalapeño, finely diced (optional)
  • 1 cup cherry tomatoes, quartered
  • ½ cup cucumber, peeled and diced
  • ½ medium red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 1 ripe avocado, diced
  • Tortilla chips or crispy tostadas
  • Lime wedges
  • Hot sauce (optional)

Instructions:

  1. In a mixing bowl, combine lime juice, olive oil, taco seasoning, and jalapeño.
  2. Add shrimp and toss to coat well.
  3. Cover and refrigerate for at least 30 minutes to marinate.
  4. While shrimp marinates, chop the vegetables (cherry tomatoes, cucumber, red onion, cilantro).
  5. After marinating, mix in the chopped veggies and diced avocado with the shrimp.
  6. Transfer to a serving dish, garnish with lime wedges, and serve with tortilla chips or tostadas.
