Ingredients:

  • 4 fillets of white fish (cod, haddock, or tilapia, approx. 150-200g each)
  • 2 tablespoons olive oil (30ml)
  • 1 lemon (zest and juice)
  • 2 garlic cloves, minced
  • 1 teaspoon dried oregano (1g)
  • 1 teaspoon dried thyme (1g)
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (optional)
  • Lemon wedges (for serving)

Instructions:

  1. Preheat your oven to 200°C (400°F).
  2. Rinse and pat dry the fish fillets with a paper towel. Place them skin-side down in a baking dish.
  3. In a mixing bowl, combine olive oil, lemon zest, lemon juice, minced garlic, oregano, thyme, salt, and pepper.
  4. Pour the marinade over the fish fillets. Let it sit for 10 minutes to absorb the flavors.
  5. Cover the fish with foil (optional for moisture) and bake in the preheated oven for 15 minutes. Check doneness; fish should be opaque and flake easily with a fork.
  6. Remove from the oven, sprinkle with fresh parsley, and serve with lemon wedges.
