Ingredients:
- 1 cup all-purpose flour
- ½ cup sharp cheddar cheese, shredded
- 2 tablespoons unsalted butter, softened
- 2 tablespoons dill pickle juice
- 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
- ½ teaspoon baking powder
- ¼ teaspoon paprika
- ¼ teaspoon salt
- 1 large egg
- 1 tablespoon water
Instructions:
- In a mixing bowl, combine flour, baking powder, paprika, and salt.
- In a separate bowl, mix softened butter with cheddar cheese, dill pickle juice, and fresh dill until smooth.
- Gradually add the dry ingredients into the wet mixture, stirring until a dough forms.
- Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch.
- Use the cookie cutter to cut out goldfish shapes and place them onto the prepared baking sheet.
- Whisk the egg and water together, then brush the mixture onto the tops of the crackers for gloss.
- Bake in the preheated oven for 12-15 minutes, or until golden brown.
- Allow the crackers to cool on a wire rack before serving.
