Ingredients:

  • 1 cup all-purpose flour
  • ½ cup sharp cheddar cheese, shredded
  • 2 tablespoons unsalted butter, softened
  • 2 tablespoons dill pickle juice
  • 1 tablespoon fresh dill, finely chopped (or 1 teaspoon dried dill)
  • ½ teaspoon baking powder
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • 1 large egg
  • 1 tablespoon water

Instructions:

  1. In a mixing bowl, combine flour, baking powder, paprika, and salt.
  2. In a separate bowl, mix softened butter with cheddar cheese, dill pickle juice, and fresh dill until smooth.
  3. Gradually add the dry ingredients into the wet mixture, stirring until a dough forms.
  4. Wrap the dough in plastic wrap and refrigerate for at least 30 minutes.
  5. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  6. On a lightly floured surface, roll out the chilled dough to a thickness of about 1/8 inch.
  7. Use the cookie cutter to cut out goldfish shapes and place them onto the prepared baking sheet.
  8. Whisk the egg and water together, then brush the mixture onto the tops of the crackers for gloss.
  9. Bake in the preheated oven for 12-15 minutes, or until golden brown.
  10. Allow the crackers to cool on a wire rack before serving.
