Ingredients:

  • 4 (6 oz) fillets of white sea bass (170 g each)
  • 1 teaspoon salt (5 g)
  • ½ teaspoon black pepper (2 g)
  • 2 tablespoons olive oil (30 ml)
  • 1 cup panko breadcrumbs (100 g)
  • Zest of 1 lemon
  • Zest of 1 orange
  • ¼ cup fresh parsley, chopped (15 g)
  • 2 tablespoons fresh basil, chopped (6 g)
  • 1 tablespoon fresh thyme, chopped (3 g)
  • 2 tablespoons unsalted butter, melted (30 g)

Instructions:

  1. Preheat the oven to 400°F (200°C). Pat the sea bass fillets dry and season both sides with salt and pepper.
  2. In a mixing bowl, combine panko breadcrumbs, lemon zest, orange zest, chopped herbs, and melted butter. Mix until breadcrumbs are well-coated.
  3. Brush both sides of the fillets with olive oil. Press the breadcrumb mixture onto the top of each fillet
  4. Place the fillets on a baking sheet lined with parchment paper. Bake for 15-20 minutes until the crust is golden brown and the fish flakes easily.
  5. Let the fish rest for a few minutes before serving.
