Ingredients:
- 1 lb fresh white fish (such as cod, halibut, or snapper), skinless, diced into 1/2-inch pieces
- 1/2 cup fresh lime juice (approximately 4-6 limes)
- 1/4 cup fresh orange juice (about 1 orange)
- 1/2 medium red onion, finely chopped
- 1 jalapeño pepper, finely diced (seeds removed for less heat)
- 1 cup diced cucumber
- 1/4 cup chopped fresh cilantro
- Salt to taste
- Optional: 1 avocado, diced, for garnish
- Tortilla chips or plantain chips for serving
Instructions:
- Rinse the fish under cold water and pat dry with paper towels. Dice the fish into 1/2-inch pieces.
- In a mixing bowl, combine the diced fish with lime and orange juice. Ensure all fish pieces are submerged, then cover and refrigerate for 30 minutes.
- While the fish is marinating, finely chop the red onion, jalapeño, and cucumber.
- After 30 minutes, check the fish; it should appear opaque. Add the chopped vegetables and cilantro to the bowl. Mix gently.
- Season with salt to taste and gently fold to combine.
- Place ceviche into serving bowls, garnishing with diced avocado if desired. Serve chilled with tortilla or plantain chips on the side.
