Ingredients:

  • 4 medium Tilapia fillets (approx. 150-170g each)
  • 2 Tbsp Extra Virgin Olive Oil
  • 1 Tbsp Fresh Lemon Juice
  • 1 tsp Garlic Powder
  • 1/2 tsp Smoked Paprika
  • 1 tsp Dried Parsley or Dill
  • Zest of 1 medium lemon
  • 3/4 tsp Kosher Salt
  • 1/2 tsp Freshly Ground Black Pepper
  • 1 Tbsp Fresh Parsley (Chopped, for garnish)
  • 4 Lemon Wedges (for serving)

Instructions:

  1. Position the oven rack 6 inches (15 cm) below the heating element and set the broiler to its highest setting. Line a broiler pan or baking sheet with foil and lightly grease the rack.
  2. In a small mixing bowl, combine the olive oil, lemon juice, garlic powder, smoked paprika, dried herbs, lemon zest, kosher salt, and black pepper to create the rub.
  3. Pat the tilapia fillets completely dry using paper towels. Place the dry fillets on the prepared rack and evenly brush or spoon the seasoning mixture over the top surface of each fillet.
  4. Carefully place the baking sheet with the fish under the broiler. Broil for 5 to 7 minutes without turning the fish.
  5. Monitor the fish frequently after 5 minutes. The surface should look lightly caramelized. The fish is done when it flakes easily with a fork and the internal temperature reaches 145°F (63°C).
  6. Carefully remove the fish from the oven. Garnish immediately with fresh chopped parsley and serve hot with fresh lemon wedges.
