Ingredients:

  • 2 whole trout (about 10-12 ounces/280-340g each), cleaned and gutted
  • 2 tablespoons olive oil, extra virgin (30 ml)
  • 1 lemon, thinly sliced
  • 1/4 cup fresh herbs (e.g., parsley, thyme, dill), roughly chopped
  • 2 cloves garlic, thinly sliced
  • Salt and freshly ground black pepper to taste
  • 2 sheets of parchment paper

Instructions:

  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Fold each sheet of parchment paper in half. Open it up, creating a crease down the center.
  3. Place one trout on one side of the parchment paper.
  4. Drizzle each trout with 1 tablespoon of olive oil, season with salt and pepper. Stuff with lemon, herbs, and garlic.
  5. Fold the other side of the parchment paper over the trout. Crimp the edges tightly to seal the packet.
  6. Place the parchment packets on the prepared baking sheet. Bake for 20-25 minutes.
  7. Carefully open the parchment packets. Serve immediately.
