Ingredients:

  • 1.5 lbs white fish fillets (Cod, Halibut, or Tilapia)
  • 4 tbsp unsalted butter
  • 1 tbsp olive oil
  • 2 fresh lemons
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 0.5 tsp fine sea salt
  • 0.5 tsp fresh cracked black pepper
  • 2 tbsp fresh parsley, finely chopped

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. Remove fillets from the refrigerator 15 minutes prior to cooking. Pat the fish bone-dry on both sides using paper towels to ensure proper searing.
  3. Season both sides of the fillets evenly with fine sea salt, cracked black pepper, and smoked paprika.
  4. Heat 1 tablespoon of olive oil in a large heavy-bottomed oven-safe skillet over medium-high heat.
  5. Carefully place the fish in the skillet. Sear until a golden crust forms, then add the unsalted butter, minced garlic, and thin lemon slices to the pan.
  6. Transfer the skillet to the preheated oven. Bake until the fish reaches an internal temperature of 145°F and flakes easily with a fork, utilizing carry-over cooking to maintain moisture.
  7. Squeeze fresh lemon juice over the fillets and garnish with chopped fresh parsley before serving.
