Ingredients:
- 1.5 lbs white fish fillets (Cod, Halibut, or Tilapia)
- 4 tbsp unsalted butter
- 1 tbsp olive oil
- 2 fresh lemons
- 3 cloves garlic, minced
- 1 tsp smoked paprika
- 0.5 tsp fine sea salt
- 0.5 tsp fresh cracked black pepper
- 2 tbsp fresh parsley, finely chopped
Instructions:
- Preheat your oven to 400°F (200°C).
- Remove fillets from the refrigerator 15 minutes prior to cooking. Pat the fish bone-dry on both sides using paper towels to ensure proper searing.
- Season both sides of the fillets evenly with fine sea salt, cracked black pepper, and smoked paprika.
- Heat 1 tablespoon of olive oil in a large heavy-bottomed oven-safe skillet over medium-high heat.
- Carefully place the fish in the skillet. Sear until a golden crust forms, then add the unsalted butter, minced garlic, and thin lemon slices to the pan.
- Transfer the skillet to the preheated oven. Bake until the fish reaches an internal temperature of 145°F and flakes easily with a fork, utilizing carry-over cooking to maintain moisture.
- Squeeze fresh lemon juice over the fillets and garnish with chopped fresh parsley before serving.
