Ingredients:

  • 1 cup (240 ml) heavy whipping cream
  • 2 tablespoons (30 g) powdered sugar
  • 1 teaspoon (5 g) sea salt
  • 1 tablespoon (15 ml) water
  • 1 teaspoon (5 g) unflavored gelatin (optional)
  • Additional sea salt for garnish (optional)

Instructions:

  1. In a small saucepan, combine water and gelatin. Let it bloom for 5 minutes. Heat gently until gelatin is fully dissolved. Let it cool slightly.
  2. In a mixing bowl, pour in the heavy whipping cream. Using a handheld mixer, beat the cream on medium speed until it starts to thicken.
  3. Gradually add powdered sugar and sea salt while mixing. If using, slowly pour in the dissolved gelatin while continuing to whip.
  4. Increase mixer speed to high and whip until stiff peaks form. The foam should be light and fluffy.
  5. Transfer the foam to the refrigerator and chill for at least 30 minutes before serving.
  6. Spoon or pipe the foam onto your dish of choice and sprinkle with additional sea salt if desired.
